Cinnamon Rolls

For the request of my dear friend, Judith I share the English version of my cinnamon rolls recipe with you. These rolls are super popular in Denmark, and it has a reason. The dough is soft and fluffy and the filling is rich and sweet. You can get these with marzipan as well. But the ultimate rolls are made with cinnamon.

It is important not to bake them for too long, as they become dry. Therefore, it is a good idea to keep an eye on them and check it regularly. Once they are cooled down a bit, you can decorate them with a glaze. It is literally just icing sugar mixed with a few drops of water.

Ingredients:

For 20 pieces

Dough:

  • 1,5 dl lukewarm milk (0.63 cup)
  • 25 g yeast (0.88 ounce)
  • 2 egg
  • 0,5 tbsp. cinnamon
  • 0,5 tbsp. cardamom
  • 50 g sugar (1.76 ounce)
  • 1 tsp. salt
  • 100g butter (3.5 ounce)
  • 500g flour (17.6 ounce)

Filling:

  • 125 g soft butter (4.4 ounce)
  • 100 g sugar (3.5 ounce)
  • 1 tbsp. cinnamon
  • 1 egg yolk

 

In a bowl dissolve yeast in milk with a pinch of sugar. Let it rest for a couple of minutes. Then add the spices, egg, sugar and salt. Finally add the butter and the flour. Mix them all together until you get a nice and smooth dough. You might need to add some more flour, if it feels too sticky. Afterwards knead the dough for 5-10 minutes. Feel free to use a mixer.

Place the dough in a bowl, cover it with a clean kitchen cloth and let it raise for about 15 minutes. Then roll the dough out on a floured surface into a 45*40 cm square (18*16 inch).

For the filling mix the butter with sugar and cinnamon. Spread it on the dough. Leave a little stripe uncovered at the bottom. Then roll the dough up and cut them into 1,5 cm (0.5 inch) slices. It should give about 20 pieces. Place the rolls on a baking sheet lined with parchment paper. Cover them and let it raise for 35 minutes.

Whisk the egg yolk and brush the rolls with it. Bake the cinnamon rolls for approximately 12-15 minutes at 180 C degrees (350 F).

Glaze it with a mixture of icing sugar and a touch of water if you feel like, once it is not so warm.
